These Flourless Honey Pancakes are naturally sweetened and packed with wholesome ingredients. The addition of roasted banana adds depth of flavor, while the protein and oats provide sustained energy. Ingredient

  • ½ cup gluten-free oats

  • 2 scoops plant-based protein powder or collagen

  • ½ tsp baking powder

  • 1 tsp cinnamon

  • 2 tbsp milk of choice

  • 1 flax egg (1 tbsp ground flaxseed + 2.5 tbsp water, mixed and rested for 5 minutes)

  • Splash of vanilla extract

Direction

  1. Preheat your oven to 425°F (220°C).

  2. Place a whole banana (with the peel on) directly onto the oven rack and roast for 10 minutes until the peel turns black. This step enhances the flavor and ensures the banana blends smoothly.

  3. In a high-speed blender, combine the roasted banana, oats, protein powder, baking powder, cinnamon, milk, flax egg, and vanilla extract.

  4. Heat a non-stick skillet over medium heat and lightly grease if necessary.

  5. Pour the batter onto the skillet in small rounds, about 2-3 tablespoons per pancake.

  6. Cook for 2-3 minutes on each side, or until bubbles form and the edges are set.
